Butterscotch Bliss

More cookies..I know, I have a slight obsession but they taste so damn good. I made these butterscotch beauties as a little treat for my parents; we have FINALLY booked my flight to Thailand for September so I thought I'd make them something tasty as a thank you, after all, how can you thank somebody for something like that?!



You will need:

250g plain flour

1/2 tsp bicarbonate of soda
1/2 tsp salt
170g butter, melted - unsalted
200g dark brown soft sugar
100g caster sugar
1 tbsp vanilla extract
1 egg and 1 egg yolk
2 bars good quality chocolate - I used white chocolate (a full 200g bar!)


First things first, preheat the oven to 170 (fan) and line a baking tray with baking parchment - or grease if you don't have any parchment


Sift flour, salt and bicarb into a bowl.


In a seperate bowl (or with a mixer), mix together the melted butter and sugars until creamed.


Now add, beating together, the egg, yolk and vanilla.


Add the flour mix and blend until thoroughly mixed.


Once mixed, take your chocolate and cut into chunks (no need to be even!) and fold into the dough.





Now you need to separate the cookie dough into chunks. I'd recommend small chunks, no bigger than 2 tbsp sized. Roll the chunks into balls and place on lined/greased baking tray.




You need to make sure they're spaced out quite well too as they will spread out.


Bake for around 10-15 - the edges should be slightly crunched and the middles soft.









Prepare to be amazed. You won't just be able to have one of these bad boys, offt!
