Scrumptious Rainbow Cookies

I love cookies. So much. There's nothing better than a cookie with a cup of tea in the afternoon. Cooookieee.



These little beauties will satisfy any cookie lover! And the best bit, you can adapt the recipe; I used peanut M&M's but you could literally bang anything in there for a bit of variation everytime you make them. Next on the cards for me will be Kinder Bueno I think Mmm!

This recipe makes about 18 large cookies, or 25-30 little ones

All you need is:
265g plain flour
220g brown sugar
1/2 tsp baking powder
170g butter, melted and cooled (I just did this in the microwave)
100g sugar
1 egg + 1 egg yolk, at room temp
2 tsp vanilla extract
200g M&Ms, or whatever you're using


1. Mix flour and baking powder in a bowl and move aside.
2. In another bowl you'll need to mix the sugars and butter. Make sure they're well mixed though!
3. Add the egg and egg yolk with some vanilla extract and mix with the sugar/butter.
4. Slowly add the flour, mixing a little in at a time. A dough should form.
5. Fold in your M&M's/chosen treat
6. Divide the dough into small balls
7. Bake larger cookies for 12-15 minutes, smaller cookies for 8-10 minutes. Keep an eye on them though, the pesky things could cook quicker than you expect! The centres should be soft and puffy with the edges a little browned. Don't overbake or you'll lose the nice texture.
