Smoked BBQ Quesadillas with Homemade Mango Salsa and Gucamole

I eat A LOT of Mexican food and it will always be my first choice of food to eat with friends - it’s sociable, simple and extremely tasty.

Since I’ve moved in with friends, it’s nice to have new people to cook for, especially when they love food like I do. So this weekend, I decided on BBQ chicken quesadillas with some homemade mango salsa and guacamole; it went down an absolute treat!

For the Quesadillas I used:
3 chicken breasts
1 packet of Old el Paso smoked BBQ fajita seasoning
1 red pepper
1 yellow pepper
1 red onion
1 white onion
3 mushrooms, cut into chunks
1/2 block grated Lake District Mature Cheddar - use more if preferred
3 spring onions
1 pack of 8 tortilla wraps

For the salsa:
1 mango
6 tomatoes
1 white onion, diced
1 spring onion, diced
The juice of 1/2 lime

For the gucamole:
2 avocados
1 garlic clove
2 tomatoes
1 red onion, diced
1 spring onion
Juice of 1/2 lime

Serve with sour cream and jalapenos for the adventurous ones amongst you!
Preheat grill to 150.
1. Fry the chicken in a little onion, when nearly done, add chopped and diced onions.
2. Fry for a few minutes than add your peppers
3. After 3-4 minutes when softened, add spring onion and mushrooms
4. After a couple of minutes, add your smoked BBQ seasoning, stirring the ingredients well to coat.
5. Put on a low heat for 3-4 minutes, whilst the seasoning is mixing with the ingredients, grate your cheese
6. When everything is cooked, place down one tortilla, cover with a layer of chicken etc and a layer of cheese on top. Cover with a second tortilla. Put to one side. Repeat. After you have prepared your salsa and guacamole, each quesadilla needs to to go under the grill for a few minutes on each side until browned, then cut into quarters.

For the salsa:
1. Remove the skin from the mango (And the seed!) and cut into small chunks.
2. Slice and dice the other ingredients before mixing together in a small bowl. Squeeze over your lime juice and mix thoroughly.

For the guacamole:
1. Mush up (technical term!) your avocados in a small bowl.
2. Dice tomatoes, onion, spring onions
3. Thoroughly mix together, crush garlic, mix again
4. Squeeze lime juice and mix again
