Cherry Bakewell Cookies

I've said before, but my Dad and Grandad love Cherry Bakewell. A while ago I made a Cherry Bakewell Cake and it went down really well. This time I decided to try my hand at Cherry Bakewell Cookies. I love anything almond-y and the Cherry Conserve (Tesco's Finest) really compliments the cookie. Yum yum yum!

All you need is:

256g  plain flour

100g ground almonds

1 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/2 tsp Salt

170g caster sugar

225ml canola oil

2 eggs

2 tbsps runny honey

1 tsp vanilla extract

Cherry Jam (about 1 tsp per cookie) - I use Tesco Finest Cherry Conserve  - amazing!

Flaked almonds, to decorate

First things first, preheat your oven to 180 (fan) and line two baking trays with parchment.

Mix the almonds, flour, spices, salt and baking powder in a bowl - set aside.

In a mixer, blend sugar, oil, honey, vanilla and eggs until well blended. This should take a couple of minutes.

Beat in the dry ingredients with the blended mix and make sure it is all well combined.

When the ingredients have formed a dough. Place small sized dough balls, well spaced, on the parchment lined baking trays. Pat each dough ball down a little.

Bake for around 8 minutes until golden brown.

Leave to cool - when cool, top with jam and scatter the flaked almonds.

Dust with icing sugar to serve if you wish.

As expected, these went down like a house on fire! My Dad pretty much scoffed the lot himself but I managed to sneak a few to work for the boys to try - they normally get upset if anything I make doesn't contain chocolate but they thoroughly enjoyed these.

Verdict: a really nice alternative to your typical sugary/chocolatey cookie
