Cookie Dough Truffles

Ben & Jerry's cookie dough should just be a big tub of cookie dough, hold the ice cream please! I am guilty of just digging out the cookie dough chunks, as I'm sure many of you are too. If you share the guilt, then you will really appreciate this recipe. The condensed milk really makes this cookie dough taste good. Try it for yourselves...

All you need is:
113g butter, softened
150g brown sugar
1 tsp vanilla extract
250g plain flour
A can of sweetened, condensed milk (397g tin)
160g milk chocolate chips (I used a bar cut into chunks)

To coat
650g chocolate - disks, chips, bars - whatever is easiest

In a large bowl cream butter and sugar and mix until creamy.  Add the vanilla.

Add milk

Gradually beat in flour...

Add more milk and flour...

Mix in the chocolate chunks...

Shape into 1 inch balls and place on waxed paper to chill for two hours - this bit is VERY messy so make sure you roll some flour on your fingers to make it easier to shape your dough balls.

I have a confession...I didn't get to the chocolate dipping stage - I ate them as cookie dough balls with the help of Luka and Vicky. I had every intention of getting the chocolate on them the next day, but it never happened...but honestly, the nicest cookie dough recipe I've tried so don't worry if you do the same, I completely understand!

If you do want to actually make them into truffles, wait until the balls have chilled. Melt your coating chocolate. Dip the balls (original recipe recommends using two forks to dip) and cover the cookie dough. Place on waxed paper and chill to set for at least half an hour, longer if possible.

Enjoy, you won't regret this creation!
