All you need to serve 2 people is:
4 meringues
1 punnet of raspberries
1 tub of mascapone
Icing sugar - about 100g-150g to mix with your mascarpone and some to sprinkle on top.
Mix together the mascarpone and icing sugar until smooth.
Place one meringue in a serving bowl, place a generous spoonful of mascarpone mix on the meriangue.
Place raspberries in a circle round the mascarpone.
Repeat - blob of mascarpone mix and a circle of raspberries, place raspberries in the middle of the circle and build to a little stack.
And that's all there is to it; an easy-on-the-eye dessert that's simple to make!
