Fruity Nutty Flapjack

Despite my love of chocolate (which borders worryingly on obsession), I would give that up for flapjack. There's something about a nice, chewy chunk of the oaty goodness that really tickles my taste buds. Quite often, it's hard to find a recipe to create the stuff at home that's as good as what you can get from the shop - but I'm confident in saying, I've found the one! This recipe ticks all the boxes and I can't wait to make it again already!

All you need is:
150g butter, unsalted and cut into chunks
75g light muscavado sugar
3 tbsp honey
250g rolled porridge oats
150g nuts - I used hazelnuts
200g cherries

Let's get cracking...

Melt the butter with the sugar and honey in a pan on a medium-low heat

Weigh out the porridge oats, cherries, sultanas/raisins and hazelnuts





When the butter mix has melted, mix together with the porridge, fruit and nuts

When thoroughly mixed, pop your oaty mix into a lightly greased, square baking tin. Spread out evenly and pad down with a fork.

Pop into the oven for 20-25 minutes until it comes out all golden and delicious like this! mmm!

Leave on a wire cooling rack until completely cooled down .When cool slice up, you should get around 16 squares (flapjack bites)
