Mousakka..minus the calories!

Moussaka reminds me of holidays to Greece with my parents when I was little; sat by the sea with a side of Greek salad and some Tzatziki. I know the proper recipe is with lamb, but I use beef as I'm not a massive lamb fan (finally, something I'm not a fan of!).

As you all know, I tend to try and cut calories where I can but still maintain the beautiful taste and I came across this...not only is it low in fat but it's also rather good for you!

All you need is:
200g extra lean minced beef
Tin of chopped tomatoes (or passata)
2 peppers, sliced
1 onion, diced
100g lentils
1 aubergine, sliced
3 garlic cloves, crushed
4 tomatoes, chopped
25g grated Parmesan
170g 0% fat free Greek yoghurt 

Cook the onion and pepper on a medium-low heat in a little oil until they soften. Add the garlic and cook for another minute.

Add the beef and break up with a fork, you don't want any lumpy bits now, do you?

Cook until the mince browns

Pour in the lentils, half of the oregano and the chopped tomatoes (or passata)

Leave to simmer for around 15 minutes until the lentils are soft.

While that is simmering, grill the aubergines for a few minutes on each side - make sure you've brushed with a little oil and oregano. You can also do the tomato grilling at this point. You may need to do it in a couple of batches as I couldn't fit all of mine in at once.

Mix half of the parmesan with the yoghurt and seasoning.

Pour the beef and tomato mix into and oven proof dish (or 4 if you're separating the portions).

Top with the sliced and grilled tomatoes and aubergine.

Pour the yoghurt on top and season with more oregano, nutmeg and the rest of the parmesan to finish.

Pop under the grill for 2 or 3 minutes until bubbling.

Serve with a side salad and a tasty dressing.

Light, delicious and low calorie - what more could you want?
