All you need is (serves 4):
4 Salmon Fillets
Asparagus - I used around 6-7 shoots per person - use as much as you like - low in calories AND perfect for debloating
New Potatoes - I used around 5 or 6 potatoes per person, halved
For the salmon marinade:
5 tbsp soy sauce
3 tbsp mirin
2 tbsp honey
2 tsp chilli flakes
You need to chop your potatoes and let them get a little steamy! Or boil them but that doesn't sound as good! Steam for 15-20 minutes, boil for 10-15 minutes
While your potatoes are cooking, prepare the salmon marinade - soy, mirin, honey and chilli flakes. Make sure the dish is long/wide enough to fit your salmon fillet in as you will need to coat the fillet in the marinade.
The salmon takes around 12-15 minutes on a medium heat to fry so pop your asparagus and sweetcorn (if using) in the steamer.
After all the salmon has been 'swished' in the marinade on both sides a couple of times, fry it in your pan. Make sure you flip the fillets over every now and again. I usually add a few extra chilli flakes and spoon over any marinade that's left onto the salmon.
When everything is done - plate everything up.
Simple, delicious and super healthy. Think this is going to be one of my new food crazes!
