Brown Butter Oatmeal Cookies


You all know I love cookies. And there are sooo many things you can do to make cookies.  These ones have white chocolate and oats in which is a mouthwatering combination, trust me, you won't just be able to have the one!

Here's the newbie...


All you need is:

113g butter, unsalted
100g granulated sugar
110g packed brown sugar
1 egg, large
2 tsp vanilla extract
120g plain flour
75g rolled oats
1/4 tsp salt
1/2 tsp baking poweder
1 1/2 tsp cinnamon
170g chocolate chunks

First things first - preheat your oven to 180


In a saucepan, melt the butter over a medium-low heat, whisking constantly. Leave to cool - NOT solidify!




In a bowl combine and the flour, salt, baking powder, oats and cinnamon, mixing well.



When butter is cool, add to bowl of mixed ingredients.Whisk in  the sugar and stir until smooth.

When smooth, add the egg and vanilla, whisking until smooth.



Stir in the dry ingredients and use your hands to bring dough together - I know this isn't the most pleasant feeling but it will be worth it, promise. If the dough won't come together, add a little milk.



When the dough has formed, fold in the chocolate chunks




You can use an ice cream scoop or your hands to form small dough balls to place a small distance apart on baking parchment - this is important as they will expand when they're cooking.

Bake for 10-12 minutes until bottoms and edges are golden and the middles are still a little squidgy. Leave to cool before serving. Do not overcook or they will lose their soft centre.
