Butterscotch and Pecan Blondies

I like brownies...I like blondies even more. Throw in some butterscotch and pecans and you've got me hooked. These are a treat that nobody should miss out on!


 


All you need is:
170g butter
100g plain flour
1 tsp bicarb of soda
2 large eggs
160g light brown sugar
100g granulated sugar
1 tsp vanilla extract
A pinch of salt
125g butterscotch chips (I used nearer 150g)
50-75g pecans, crushed with you hands (optional)

First things first, preheat your oven to 180 and grease/line a sandwich tin with butter and/or baking parchment.

Cream together the sugar and butter in a bowl






Add the eggs one by one, mixing thoroughly



In a seperate bowl mix the flour, salt and baking powder




Mix the dry ingredients with the butter etc a little at a time.



When mixed..fold these bad boys in!


And crush a few pecans up in your hands and throw them in too. Trust me, butterscotch and pecans will be your new favourite thing!



Get them in...and some more for good luck...



Keep stirring...




Now get it into the pan and cook for 20-30 minutes until a prong comes out of the middle without any mix on.

When the mix has cooked, take it out of the oven and allow it to cool before cooking.

I get 16 perfect-sized chunks out of this tin.



GET IN MY BELLY...






Usually the general consensus for my baking is: the more chocolate the better but these beauties went down very, VERY well. The butterscotch would be lost in a chocolate brownie in my opinion. I definitely think the pecans are a good addition too - the melted butterscotch, the soft spongey feel of the blondie mix and the crunch of the pecans make these impossible to put down...and even more impossible to just have the one.
