Cheeky Cherry Brownies

Everytime I make brownies, I try a different recipe. You could say I'm on a quest to find the ultimate brownie recipe. These ones were beautiful and the cherries I put in go so well with the chocolate. I'm still not convinced this is the ultimate brownie recipe though. The quest continues...

All you need is:
150g chocolate, roughly chopped
100g plain flour
115g butter
260 granulated sugar
2 large eggs
1 tsp vanilla extract
A pinch of salt

Additions:
I use 200g glace cherries but you could use pecans and cherries, chocolate chips, butterscotch, honeycomb - whatever floats your boat! 

First things first, preheat your oven to 180 (fan assisted) and line and butter your sandwich tin.

Melt the butter and chocolate in a heatproof bowl over a pan some simmer water - stir it every now and then to make sure it doesn't stick to the bottom.

 


In a seperate bowl, mix together sugars, eggs and vanilla



Stir, stir, stir!



Stir in butter and chocolate mix once melted


Chop up your cherries ready to go in the mix.





Spoon the flour into your mix



Stir it well until it looks all delicious and chocolatey, mmm!


Fold the cherries in (or whatever you're using)



Pour the mix into your sandwich tin.
Pop the mix into your oven for around 25-30 minutes or a baking prong comes out of the centre clean.



It will come out looking like this tasty little devil!
Now, now, leave it to cool. I promise it will taste even better later!



When cool, chop up into squares - you'll get about 16 from the sandwich tin.












And dig in...I can't promise you they'll be around for long!
