Chocolate Cupcakes with Buttercream Icing

As well as the cat cake for Vicky's birthday, I also decided to have a go at some cupcakes. Cupcakes are something I am pretty much useless at; the ability to ice in cupcake-style absolutely baffles me and I cannot do it for the life of me! These beauties actually turned out semi-alright - and they tasted absolutely beautiful. 

[Loosely based on Annie's Mocha Brownie Cupcakes]

I halved the recipe as you can see below

All you need (for 12) is:
78g butter
200g sugar
95g plain flour
1/4 tsp baking powder
1 and a half eggs
100g chocolate - I used galaxy

For the buttercream:
113g butter
192g icing
1/2 tsp vanilla extract

To decorate:
White Malteasers, flakes, chocolate buttons - whatever you like!

First things first, preheat your oven to 180 and line two cupcake pans with paper cake liners (I used some nice silicone ones my Mum bought for me)

Melt the butter and chocolate in a bowl over a pan of simmering water until melted and combined. When melted, put to one side.

In a sepearte bowl, mix the flour, baking powder and salt in a bowl. Leave to one side

Using a mixer, whisk together the eggs and sugar on a medium speed until light and fluffy.

Stir in the chocolate mix and add the dress ingredients

Pour an equal amount of mixture in your cupcake liners and op in the oven to bake for around 20 minutes. The centres should come out with only crumbs when lightly sticking a baking prong through.

And then, get ready to decorate!

For the buttercream icing, you literally just pop everything in a bowl and mix it together.
I'm shocking at cupcake icing so my attempt is pretty pathetic but I threw a load of chocolate on top to disguise that!

Use whatever you like to decorate - I opted for chocolate buttons, white malteasers, cadburys flakes (left over from Vicky's Cat Birthday Cake) and dairy milk chunks.

As you can see, despite my lack of skill when it comes to making cupcakes, they don't look too bad. AND the best news? They tasted absolutely amazing! Try them, I dare you.
