Comfort Food Alert

This is a pretty lazy post for me...but I just wanted to show you; I can be a lazy cook because sometimes, you simply want some easy, quick, comfort food. My version of this is either poached duck eggs on toast with pepper and brown sauce...or a veggie filled omelette (baked beans and toast with loooads of HP sauce too). I love omelettes and they feel so healthy because all I put in them is loads of vegetables, a little bit of oil to fry them in, eggs and seasoning. Okay, so shop bought baked beans aren't exactly good for you because of the salt content but they're lovely and everybody deserves a treat every now and again.

All I use is:
1 onion, diced
4 tomatoes, chopped
4 mushrooms, chopped
1/4 courgette, chopped
1/4 pepper, chopped
Salt and Pepper, to season
2 large eggs

It's simple - fry the vegetables on a medium to low heat in a little oil


When they've all softened, tip in the beaten eggs.

Allow a few minutes for the edges of the omelette to cook. Move the mix in the middle around with a wooden spoon/spatula. 

I don't even flip mine..I simply fold it in half, flip it over that way (a minute on each side) and plate up.


Omelette plated. Now get the beans out, the toast buttered and prepare to squeeze that sauce!


This might look like some people's idea of hell...but trust me, when I need something comforting, I turn to this (or houmous, but I know which I prefer...)
