Oat and Blueberry Pancakes

Pancakes are like the dream food of breakfast, aren't they? Well, they are for me...and as always, I wanted to find a healthy alternative to the notoriously calorific American-style breakfast pancake. And I found these...lucky me!!

Blueberry and oat pancakes - no eggs, no flour - PERFECT.

All you need (for 8 pancakes) is:
140g oats
175ml skimmed milk (almond or soy are also fine)
1 1/2 tsp baking powder
A pinch of sal
2 medium bananas (ripe ones!)
1/2 punnet blueberries,
A drizzle of honey, to serve
A handful of berries, to serve

So so easy! 

Measure out your oats

Bang the banana and milk in a blender. Blend them up for around 30 seconds.

Next, add the oats, baking powder and salt and blend some more - about a minute.

Throw your blueberries in.

Stir them in.

Heat up a non stick frying pan and add a little oil or low cal cooking spray.
Ladle the batter into the pan.

Make sure you flip them over.

Dish up on your plate.

Drizzle with honey and throw your berries over.

BEAUTIFUL. I think these are going to end up being a rather regular occurance in my house....especially seeing as my Dad decided to eat half of my portion. Food love runs in my family!
