Spinach, Ricotta and Pine Nut Pie

Other than Goats Cheese and Caramelised Onions, Spinach and Ricotta is my other favourite combination of foods, throw some pine nuts in there and you're on to a winner! I've made Spinach and Ricotta Filo Parcels before which tasted incredible but looked less than presentable, so this time, I thought I would try the Spinach and Ricotta Pie. I served mine with a small side of Panzanella (which I made here recently) and some rosemary new potatoes. I cannot put across to you how amazing this tasted, yum yum yum!

All you need is:
250g fresh spinach
1 egg (I used yolk only as my Mum cannot have egg white)
250g ricotta
1/2 tsp nutmeg, freshly grated
100g feta
1 medium onion, finely diced
2 garlic cloves, crushed
Pepper, to season
4 sheets of filo pastry


Dice your onions


Make sure the spinach is fresh


Heat a little oil in a frying pan and start cooking those onions on a low to medium heat. Don't let them brown, they just need to be lovely and soft! Add the garlic too.


After 8 or 9 minutes, add the pine nuts and spinach and keep mixing until the spinach has wilted - around 5 minutes this should take


While the spinach/onion etc are still cooking on a low heat...grab a seperate bowl and mix the egg, ricotta and nutmeg.


Combine until it is thoroughly mix. Good enough to eat straight from the bowl, right?!


Stir the cooked onions, spinach and pinenuts into your recently mixed ricotta, nutmeg and egg. Add your pepper to season, I like plenty of pepper in my food!


Stir it well...


Roll out your filo sheets and line a lightly oiled sandwich tin with the filo sheets - leave the spare bits overhanging.

Pop your mixture in the middle and fold the over hanging bits over the pie filling


Lightly drizzle the top of the pie with oil.


Pop it in the oven for 25 minutes or until golden brown


And wait for this bad boy to come out of the oven...



Cut a generous slice for your diners! The recipe serves 6...but 4 in my house. We don't do small slices!


Serve with a side salad and new potatoes for a really nice summer meal.
