The BEST Brownies

As you know, I've been on a quest to find the best brownie recipe...and I've cracked it. You've had S'mores Brownies, Pecan Fudge, Cherry brownies, 100 Cal brownies, Chunky Nutty and now...Skinny Brownies.



I doubled up the recipe from the original to leave me with 16 good size chunks and threw in a few cherries for extra flavour but, in all honesty, they would have tasted equally as delicious without.


The secret ingredient? Avocado instead of butter. Not only are avocados tasty, they're a much healthier substitute for  you than butter. They're a good source of fibre, full of vitamins and packed with good fats so despite (what most people consider) a high number of calories, they are not something that should be avoided.

All you need is:

2 Avocados
1/2 cup plain flour
3 cup granulated sugar
1 cup cocoa powder
200g milk chocolate
1 large egg
100g cherries (optional)

First things first, preheat your oven to 180 (fan assisted) then line and grease a square baking tin.


De-skin the avocado and remove the seed. Place in a bowl and mash up with a fork - make sure it's as smooth as possible.




When the avocados are mushed up and smooth, add the egg and mix well.
Fold in the flour (adding a little at a time) and mix well


Next add the sugar and cocoa powder.


Melted the milk chocolate (either in a bowl over a saucepan of simmering water or in 30 second blasts in the microwave) and fold into the mix.


Halve or quarter the cherries and fold them into the brownie mix. 




Pour the mix into the lined baking tin and bake for 30-35 minutes.
Test to see if they're done using a baking skewer/prong and if the middle comes out clean they're done and dusted!

Wait for them to cool then slice them up!
