Homemade Fish Fingers

After a weekend filled with food and drink, I needed something light and, more importantly, really healthy for my dinner. My hangover craving always involves fish fingers, I have no idea why but that craving reered its head once again. Instead of resorting to good 'ol Birdseye, I decided to make my own. They are really easy and, I'm pretty sure, much tastier. Served with salad and you're in for a healthy, tasty tea!


All you need for one person is:
2 cod fillets
2 tbsp panko breadcrumbs
1 egg, beaten
1 tsp mixed dried herbs
lemon juice
Pepper, to season

I served mine with lemon and garlic mayonnaise, roasted butternut squash and a side salad.
Note: if you are also wanting to have roast butternut squash, remember it needs about 45-50 minutes in the oven so you'll need to do that waaay before you even think about making your fish fingers.

First things first, preheat your oven to 180 (fan assisted) and lightly grease a baking tray.

I used two dishes - one with the beaten egg in and one with the breadcrumbs, lemon juice (a little bit), pepper and herbs.


Chop the cod up into 'finger' like strips.

Dip the cod into the egg first then coat in the breadcrumb mix from your second dish.

Keep repeating, placing them on your greased baking tray, until you have done all of them.


Stick them in the oven for 20 minutes until they are golden brown.



Plate up your salad or chosen side.


Pop your fish on and have with LOTS of mayonnaise.
