Oat, Butterscotch and Choc Chip Cookies

Another day, another cookie. I like to surprise the boys at work midweek with a sweet treat but it has to be something different everytime. It means I can bake to my hearts content without the guilt of sitting at home scoffing it all. At the moment I'm really obsessed with anything oaty so I thought I'd incorporate that with my cookies - *drum roll* - Oat, Butterscotch and Chocolate Chip Cookies. Yes, they're as good as they sound.

All you need is:
170g butter, softened
1 tsp baking powder
1/2 tsp cinnamon
100g sugar, white
200g sugar, packed brown
245g rolled oats
155g plain flour
2 eggs
1 tsp vanilla extract
150g butterscotch chips
150g chocolate chips
A pinch of salt

First things first, preheat your oven to 180 (fan assisted) and line a couple of baking trays with baking parchment/grease proof paper.

Grab a bowl and beat together the butter and sugars well until they're like a thick cream. Add the eggs, one by one, and the vanilla.

Stir the flour, cinnamon, salt and baking soda in a seperate bowl.

Add the flour mix into the butter mix a little at a time and combine well.

Stir in the oats, butterscotch and chocolate chips - make sure it is all mixed in well.



Spoon the mix onto the baking trays - a teaspoon will be plenty.

Bake for about 8 minutes.

Allow them to cool then dig in!
