Skinny Tuna Burgers

I'm aiming to have a meat free week; I like doing this every now and again because it makes me try new things, new flavours and, to be honest, I'm not a crazy meat eater anyway; give me a steak and I'm yours, but I can happily leave the rest. Pescatarian food is bursting with flavour, it's good for you and often lower in calories.

For one you will need:

1 tin of tuna
2 tsp parsley or chives
1 spring onion, finely chopped
A pinch of chilli
1 egg

1/4 red pepper

3 or 4 cherry tomatoes, quartered
A generous helping of spinach

I served mine with gucamole, my standard recipe is here. Also, nice on standard burger-esque bun but I find Tesco's Finest bake at home ciabatta rolls to work a treat!

This literally requires to pans, a couple of bowls and the hob - effortless and cheap too!

First of all, I drained my tuna of it's oil, threw it in a bowl and sprinkled some chilli flakes it. I then chopped up my spring onion and chives and threw them in too.

Avocado smushing and guca-making came next.

I then threw my chopped veggies into a frying pan and sauteed them on a low heat.

While the veggies cooked, I added some pepper and my beaten egg to the tuna mix (NOTE: beat your egg in a jug/dish before and tip a little in at a time - you may not need it all)

Heat oil in a frying pan and shape your tuna mix into patties.
Pop them in an fry on a medium-low heat for a few minutes on each side.

It's a crazy quick meal that's not only tasty but pretty healthy too.

Here's mine, served with gucamole, spinach, peppers, onions and potatoes.
