Easy Peasy Pasta

Just recently, I feel like my love of Mexican food has shifted to a rediscovery of my love for Italian food - especially pasta. There's nothing more satisfying that a delicious bowl of tomato-y, cheesey pasta. This recipe was really thrown together tasted delicious!

All you need to serve 4 people is:
1 tin of cherry or plum tomatoes, chopped
1 onion, diced
1/2 courgette, diced
A handful of olives, chopped
A handful of capers, chopped
2 tbsp tomato puree
1 tbsp Italian herbs
Buffalo Mozzarella
A couple of handfuls of dried pasta per person

For the pasta sauce all you need to do is soften your diced onion in a heated pan (medium-low heat) with a little oil. Allow 4 or 5 minutes for them to soften before adding your courgettes. When the courgettes have softened, add your tomatoes, olives, capers and herbs. Allow the tomatoes to reduce a little then add your puree. Cover the pan and allow the sauce to thicken gradually.

While the sauce is thickening, pop your pasta in a saucepan of gently simmering water and allow 10 minutes or so for the pasta to cook.

When the pasta is cooked, check on your sauce - it should now be thick enough.

Drain your pasta, dish up, pop some sauce on top and rip up your tasty mozzarella and scatter over the dish.

Season with some fresh black pepper.
