Nutty Rolo Cookies

Gooey centre? Chocolate Chunks? Pecan Nuts? Got your attention?

These cookies are to. die. for. Even if just for the gooey-ness! Yum yum! I'm not really sure they need much on an introduction. Give them a try, they're the perfect companion for your mid-morning/afternoon/evening/whenever cup of tea.

All you need is:

1 1/2 cups of butter, unsalted and softened
1 cup granulated sugar
1 cup brown sugar
1 tbsp vanilla
3 3/4 cups plain flour
2 tsp bicarbonate of soda
1 tsp
1 bar galaxy chocolate, roughly chopped
3/4 cup pecans
30 rolos, frozen for an hour or two beforehand

First things first, preheat your oven and line two baking trays with parchment/baking paper.

Using an electric whisk, beat together the butter, sugars, vanilla and eggs in a bowl.

Until it looks creamy...

Chop up your choccy...

Mix in your flour, a pinch or salt and bicarb into the creamed mix.

Mix together until it forms a dough...

Roughly chop your pecans and fold them in

Get your frozen rolos out...

Make small cookie dough balls and place a rolo in the middle...cover with a little more dough.

The original recipe suggests popping them in the freezer for 15-20 minutes...but realistically, who has room for two big baking trays in their freezer? Erm, nobody I know.

Pop them in the oven to bake for around 12 minutes - the outside should be slightly crispy and the middle still soft.

Pop them on the cooling rack and try and wait for them to cool

Plate them up and serve them to your loved ones

This cookie recipe can be used as a basic recipe and the rolos/pecans/chocolate chunks can be replaced with something else - just what I love, a versatile recipe!
