BAKED: Chocolate and Pecan Cookies

I love cookies - and nothing tastes better than raw cookie mix (sorry hips/arse/thighs!) As I make cookies so often, I'm trying to find a basic recipe that I can whip up everytime and just vary what I throw in. I've tried a few and this one seems to be pretty darn good.

These beauties are especially delicious - I'm very biased; anything with pecans in and I will sing it's praises from the roof top!

All you'll need is;
150g butter, softened
80g light muscovado sugar
80g granulated sugar
2 tsp agave nectar
1 large egg
225g plain flour
½ tsp bicarbonate of soda
½ tsp salt
1 bar of galaxy chocolate, in chunks
2 handfuls of pecan nuts

Let's get baking...

Preheat your oven to 170/180 fan assisted.

1. In a large bowl, cream together the butter and sugars

2. When they're light and fluffy, throw in your egg and agave nectar (or vanilla essence if you prefer) and give it a good whisk together.

3. Throw in your flour, bicarb and salt. You guessed it, give it a thorough mix until everything is well combined.

4. Now add your chocolate and pecans and fold into the mix.

5. Line a baking tray with baking parchment/grease proof

6. Pop a little ball of the mix on the tray - you should get about 12 little balls out of the mix.

7. Cook for 15-20 minutes BUT keep an eye on them. I often put a timer on after 10 minutes then every 5 after so they don't overcook. You want a golden outside with a delicious, soft centre!
