COOKED: Mexican Chicken with Homemade Guac and Mexican Rice


If there's one cuisine I can't get enough of, it's Mexican. 

It's so simple to throw a Mexican meal together, especially if you're involving your slow cooker.

This post isn't like my usual recipe/foodie posts, it's more of a flying tour through my love of a quick-to-rustle-up Mexican meal (if you can class meat in the slow cooker for 6-8 hours quick...convenient, shall we say that instead?)

Usually I would suggest a whole chicken, but this was a last minute decision before heading out for the day...so I threw 6 chicken breasts in a pint of chicken stock (or more, make sure the chicken is covered) with a chopped onion. 

I also made my own taco mix - 1 tablespoon of chilli powder, 2 crushed garlic cloves, 1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon of sea salt.

I left this in my slow cooker on high for around 6-7 hours.


As it was a 'what have we got in the pantry I can use' kinda meal, I thought - why not make some Mexican rice. Now, I'll admit, this wasn't exactly that Mexican but hey, it tastes good.

All this has in it is a tin of chopped tomatoes, half a tin of kidney beans, 1 teaspoon cumin, 1 teaspoon mixed herbs, 1 tablespoon of water, 1 teaspoon tomato puree, a few chilli flakes and jalapenos (if you can handle them, I evidently can't...)

When the chicken's ready, it literally falls apart. I pour about 1/2 pint of the liquid in with the chicken, you can add more if you like - I find it really makes the chicken have that 'melt in the mouth' taste to it.


Serve it up all up with some lime slices, tomatoes, a mixed salad, tortilla chips and whatever else you fancy.


Oh, and I need to tell you about the guac. It's delicious. I probably make this like every other person in the world but I seriously wonder why people buy it from the shop instead of making it from scratch.

2 avocados mushed up in a bowl, 1 crushed garlic clove, 3 or 4 plum tomatoes (chopped up small), 1/4 red onion (diced up small), juice of 1/2 a lime, a sprinkle of chilli flakes and a little sea salt and crack blacked pepper to season.

Mix it all up well and scoop that stuff on a tortilla chip. Phwoar!


Although there's lots of little bits to this meal, it's a really nice dinner to throw together - even if it's just for two or three of you. But that's also the best bit, with the luxury of using a slow cooker to perfect your chicken - you could use a whole chicken and whip this dinner up for a big group of you too!

  1. This looks delicious! Mexican is one of our favourites as its so easy to throw together and you can have so much fun playing around with the flavours, interpreting them in different ways. I will definitely have to give this a go when I finally get around to getting a slow cooker! :) x
